White Quinoa, Vegetables* (Carrot, Red Bell Pepper, Green Bell Pepper, Onion, Peas, Garlic, Spinach), Salt, Yeast Extract, Natural Flavor, Spices* (Oregano, Celery Seed, Thyme).

Chicken Scampi

| 1/3 Cup Olive Oil
3 Cloves Garlic, Minced
1-1/2 Tbsp. Fresh Lemon Juice
1 lb. Chicken Breast, Cut Into 1" Cubes
2 Tbsp. Fresh Parsley, Minced
Salt and Freshly Ground Black Pepper
1 Medium Tomato, Chopped | In a large skillet, heat olive oil over medium-low heat. Sautee garlic until golden, up to 10 minutes. Add lemon juice, chicken, and parsley. Season with salt and pepper to taste. Cook 5-8 minutes or until chicken is no longer pink. Stir in tomato and heat through. Sprinkle with lemon juice if desired. Enjoy! (3 Servings) |
