What is the meaning of flexitarian?
Wikipedia, 2009 cites two definitions in regard to this subject:
- In 2003, the American Dialect Society voted "flexitarian" as the year's most useful word and defines it as "a vegetarian that occasionally eats meat".

Is it safe to eat buckwheat if I have celiac disease?
Yes. Buckwheat (Fagopyrum esculentum Moench) is a crop that is in the same family as rhubarb, a fruit. It is not related to wheat or any other wheat derivatives and therefore is an appropriate food choice for those with celiac disease.
Buckwheat provides a good source of high-quality plant protein, B vitamins, fiber and is also a source of iron. Buckwheat is triangular in shape and has a black outer hull. Once the hull is removed, the remaining kernel is known as a groat. Groats are also available in other forms such as roasted groats (kasha), grits, and flour.
What is quinoa?
Quinoa (pronounced keen-wa) is one of the world's most nutritious grains and has been consumed for thousands of years in South America. Quinoa is higher in protein, calcium, iron, B vitamins, and zinc than any other plant source. It is naturally gluten free and an excellent food choice for anyone with celiac disease, gluten intolerance, or wheat allergies.
Quinoa seeds are naturally coated with a bitter-tasting saponin that protects it from birds and insects. Our quinoa supplier uses a process to remove this coating which saves our customers from having to wash and rinse the grain before cooking.
