About Free Choice Foods
The concept behind Free Choice Foods® began to unfold as our President and Owner, Kathy Lewis, MS RD studied Celiac Disease and the gluten-free lifestyle as a personal interest. Once informed about the medical and nutritional complications of the disease, Kathy was amazed at the challenges facing caretakers and individuals in planning and preparing nutritious gluten-free meals.
Specific nutritional concerns such as anemia, bone disease and lactose intolerance are commonly enountered in Celiac Disease. They are directly linked to malabsorption or inadequate intakes of key nutrients such as iron, folate, vitamin B12, calcium, vitamin D, and fiber (Case 73-103). Medical practitioners traditionally advise Celiacs to prepare meals at home, to cook from scratch, and to diligently read food labels to avoid hidden sources of gluten in processed foods.
Considering today's busy lifestyles and the time required to plan and prepare nutritious gluten-free meals, Kathy put her expertise as a food product developer and Registered Dietitian to work to fill a need for the Celiac community. Her mission for Free Choice Foods is to simplify gluten-free meal planning by providing nutritious, tasty, natural, and convenient dry-mix entrees and side dishes which everyone can enjoy. Free Choice Foods® offers flexible preparation suggestions to meet dietary needs and preferences whether vegan, meat-lover, or somewhere in-between.
